Gelatine
Fining agent for wine, beer and alco-based clarifications
Product Description and Function
Modified gelatine.
High purity hydrolyzed collagen-based fining agent derived from porcine gelatine.
Modified gelatine is produced by a new acid hydrolysis system and as a result is very low bloom, has a higher level of positive charge compared to standard gelatines and thus gives improved fining action and firmer sediment.
Can be used for the clarification of beer, alco-based beverages, white, rose & red wines and is especially useful for softening red wines by removing excess harsh tannins.
High purity meaning that it has relatively neutral flavour/odour compared to standard gelatines and has no determinable negative effect on beverages quality.
Dosage and Application
Gelatine should be added directly to the wine or beverages after fermentation, once the wine has been stabilised and thoroughly degassed.
It is recommended to use in conjunction with Kieselsol, especially for use in white and rose wines, or red wines with low tannin content.
The recommended dosage:5-6g /20-25L of wine. Testing is recommended for an optimum dosage for a specific application.
Store in the original sealed container, in a cool, preferably dark place.
Keep container sealed when not in use.
Kieselsol 30%
A highly effective silica sol fining aid for
use in the clarification of alcoholic beverages
Kieselsol is an aqueous solution of food grade colloidal silicic acid for use as a high performance fining aid in the clarification of fermented alcoholic beverages. Suitable for use with a wide range of fermented alcoholic beverages as it can be used across a wide range of acid content and pH, has been specially developed with optimum charging and alkalinity ensuring rapid interaction with yeast cells and other debris. Kieselsol must always be used in conjunction with Gelatine or Chitosan for effective clarification. Kieselsol can be applied directly to the beverage once fermentation is complete and the beverage has been stabilised. Before addition of Kieselsol and other fining agents it is important to thoroughly degas the beverage as excess dissolved CO2 will increase the clarification time. Kieselsol can be introduced directly into the fermentation or clarification vessel.
Dosage: 15g /23-25L
